If you're someone that buys Lucky Charms, Count Chocula, etc. for the marshmallow in the cereal mix, you're in for a treat. I found out that they sell the dehydrated marshmallow bits. In bulk. Yep. No more digging through mounds of 'cereal' for the good bits!

See? I should stick with baked goods.

Recipe:
6 tablespoons butter, softened
2 tablespoons shortening, softened
1/2 cup brown sugar, packed
1/3 cup sugar
1 large egg
1 1/2 teaspoons vanilla extract
1 1/3 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sweetened coconut flakes
6 oz white chocolate chips
2 oz macadamia nuts, chopped

Preheat oven to 350°F. Cream butter, shortening and sugars until well blended. Add the egg and vanilla extract and blend well. Add flour, baking soda and salt to creamed mixture till dough forms. Stir in coconut flakes, chocolate chips and macadamia nuts. Drop teaspoonfuls of cookie dough onto ungreased baking sheets. Bake for 13 minutes. Cool slightly and transfer to cooling racks.

Damn...

Who would've thunk that it's possible to burn a bunch of hard boiled eggs? It could've been the fact that I'm bloody impatient and boiled the eggs on high heat...or it could've been the fact that I was yakking on the phone with a buddy till I heard a loud "POP!" coming from the kitchen (most probably the sound of an egg exploding). Well, lesson learned. Oh, and the saucepan was a goner as well...

My plan for a quick stir-fry of catfish nuggets and ginger slices was abandoned when I realized I didn't have any fresh ginger on hand. Plan B. Season and coat the catfish nuggets in cornflour and pan fry them till crisp. Serve with side of orange ginger dipping sauce. Voila!

I had most of the ingredients but ended up making a few substitutions (since I can't be arsed to get myself to the ethnic grocery shop). So instead of Thai basil and eggplant, I made do with regular basil and fresh mushrooms. Ya know, it didn't turn out too bad. Another trick I learned from one of my buddies, was to parboil the chicken before adding it to the spice mixture.

My Thoughts:
The tilapia was very moist, and most of the flavour was in the crust (which was fine by me!). I made the mistake of drizzling the lemon caper sauce on the fish (it was really tart!). It was probably better to serve the sauce on the side of the fish.
